Cupcakes, Vindaloo, and Cashew Chicken.

Lamb Vindaloo! Is there anything better than spicy lamb over rice?
Nope.
Vindaloo is a tricky flavor to nail, I've found that apple cider vinegar is a good start. Then cumin, garam masala, fenugreek, lots of onions, garlic, and I add tomatoes. I want to make something Indian with okra next, we'll see how it goes.
One of my favorite things to make is cashew chicken. It's fast, delicious, healthy, and pretty to look at, to boot!
