Lentil curry, for me, myself, and I.

I finally cooked a meal for myself. Shut up.
Tonight I made red lentil curry. Lentils, vegetable stock, onions, garlic, tomatoes, ground coriander, ground cumin, and cilantro. I thought about making up some basmati or roti, but decided that the lentils were filling enough on their own. I don't plan on being too terribly extravagant in the kitchen in Richard's absence, so be prepared to see a lot of vegetarian Indian dishes. It's not that I don't like to eat simply because he's gone, it's just that I hate having a messy kitchen when I only cooked for me... it's actually a lackadaisical type of thing!

I think Indian food photographs quite well, wouldn't you agree?
