We love couscous, it's one of our side dishes of choice. Tonight I roasted a whole chicken that I rubbed with Ras El Hanout and stuffed with a whole lemon. For accompaniments I made couscous with apricots and almonds, and some stewed eggplant with fresh tomatoes, chickpeas, garlic, spices, and fresh parsley. The eggplant was my favorite part... it was almost like hot babaganoush!
