In a saucepan, bring 1/2 cup sugar and 1/2 cup water and 2 tbsp lavender flowers to a boil. Remove the pan from the heat, and let the syrup cool completely.
Pour your desired amount of lavender syrup into a glass, and top with sparkling water. I used San Pellegrino. Or you could use champagne, which I'm sure would be fantastic.
