Today Ricky got off early, so we went and did some christmas shopping, visited Bethany and Braden at the hospital, and did our grocery shopping on Eglin. It was a long day, but I think it felt longer because it's been getting dark earlier and earlier.
By the time we got home it was near 7:30, so we wanted a relatively quick dinner. This is what I came up with. Pan-seared rib-eyes with roasted tiny potatoes with lots of fresh dill, and Ricky's favorite vegetable: canned white corn. He's cute. I roasted the potatoes on the stove top in a large enameled cast iron pot with olive oil, salt, and pepper.
I also made some Brie en croute, because, well, I love cheese.
I got Christmas shopping done for both of my sisters today, which was a big relief.
