Big Swells and Truffle Oil

Last night we went out to the beach to see the 5 foot swells that were the aftermath of teeny (on our end) Hurricane Ida. The waves were huge! It was too dark to get a good picture, sadly. There was even a guy out there surfing! People are crazy. I can't wait to surf here, but it seems like the only good waves come with the storms...hmm...

For dinner I prepared my kick ass potatoes. That's the name Ricky gave to them the first time I made them, and I think it fits so it stays.
Fingerling potatoes (I like to use different colors, but you can be boring and use all red or white)
Olive Oil
4 cloves of minced garlic
herbes de provence (to taste)
kosher salt
black pepper
small amount of truffle oil, this stuff is money
In a large bowl, combine olive oil, herbes de provence, salt, pepper, garlic, and truffle oil
Add sliced potatoes, stir to coat.
Removed potatoes with a slotted spoon and transfer to a foil lined baking sheet. Back at 450º for 35-40 minutes, until potatoes are crisp-tender. Put hot potatoes (heehee) back into the oil mixture and stir to coat. Serve!

Look at their red-yellow-purpley goodness!
Seared Tilapia with paprika, kick ass potatoes, and green beans sauteed with red onions and lardons. Delicious and fast, as the only thing that took any real time was the potatoes. Definitely a great weekday meal.
