Oh Chicken Cacciatore, how I sing your praises. You are easy to make, easy to shop for, tasty as all get-out, and relatively fast. You make me happy, and you make my husband happy, and for all of these things, I love you.
Chicken thighs (if you use breasts, you'll be disappointed)
1 sliced red bell pepper
1 medium onion, sliced
1 lb chopped roma tomatoes
4 cloves of garlic, minced
10-15 green olives, crushed (I just smush them in my fingers, it's fun)
chicken stock
dry red wine
fresh parsley, salt, pepper, bay leaves.
Polenta to serve
I'd write the recipe but I think that stew-type things are pretty self explanatory.
If you invest in only one special thing for your kitchen, make it a large, enameled, cast iron pot. It's uses are infinite, as is it's lifetime. Sure, it's expensive up front, but you'll never have to replace it and you'll find yourself using it more often than you think you will. Le Creuset is a great brand, get them at Williams Sonoma. If you're lucky you can find their products at discount stores like TJMaxx. I love it when that happens. =)
After dinner I washed up with some Lemon Verbena dish soap from Mrs. Meyer's. It's funny, I actually prefer to wash my dishes by hand, because this soap smells so fantastic. I've never understood people that let dishes pile up in their kitchen. It takes what, 20 minutes? To clean all the dishes, wipe down the counters, take out the garbage, and do a quick spot mop (if you're a messy cook, like me!) and so worth it. I happen to relish that feeling of accomplishment when you stand back and look at your gleaming kitchen, smelling (if you've taken my shopping advice) of Lavender and Lemon Verbena and looking so so pretty!
