Eat Sweet Potatoes!


Sweet potato risotto with baked chicken breasts seasoned with lots of black pepper and cardamom and some steamed asparagus!
The risotto was simple, it's just a basic risotto with finely chopped onion, 1 finely chopped sweet potato, fresh thyme, parmigiana reggiano, green onions, and with white wine and chicken stock for the cooking liquid. Scrumptious! Makes me wonder why I don't eat sweet potato more often.
